Holiday Salad

Holiday Salad
  • 2 C green cabbage, shredded or chopped
  • 2 C red cabbage, shredded or chopped
  • 1 C dried cranberries
  • 1/4 C red onions, diced
  • 1/3 C vegetable oil
  • 1/3 C sugar
  • 1/3 C cider vinegar
  • 1 tsp celery seed
  • 1 package feta cheese
  • 1 C chopped pecans or walnuts

Combine everything but the feta and nuts, Marinate 3 hours, then drain the liquid. Add the cheese and nuts.
Good up to 5 days!

This was a runaway success at our house last night. I doubled the recipe, but set about 1/3 aside for later, as I didn't think the younger members of the family would appreciate it. And in fact, the youngest didn't try it. . .because he didn't get a chance. It was much enjoyed, and the leftovers went to school for lunch with the high school girls today. This will be a family staple!
